RECIPES AND TIPS IN USING YOUR FOOD STORAGE ITEMS

I will be continually adding tips and recipes as I find them.

TIPS USING YOUR FOOD STORAGE IN COOKING:

1. I find making soups and casseroles is a great way to rotate canned vegetables, tomatoes, tomato sauce, broths, beans and packaged rice, pasta and noodles.

2. Out of cooking oil? When baking a cake you can replace the oil by using the same amount of pureed beans in place of the oil. If the recipe calls for 1/3 cup of oil then use 1/3 of purred beans.
Note: If chocolate cake use pinto beans, black beans or kidney beans. If a white or yellow cake use white navy beans or butter beans. To puree take a can of bean with the liquid and puree in a blender. Use as needed. Also cut down on fats and calories!

3. If you store dehydrated powdered eggs rotate them by using them in cooking recipes (cakes, nut breads, cookies, etc.). Follow directions on powdered eggs regarding how much equals one egg.

4. T.V.P. as a tasty substitute--T.V.P. is made of soy bean flour plus approved colorings and flavorings. It contains 1/3 the calories of ground beef, absolutely no cholesterol, a negligible amount of fat and all the essential amino acids found in meat. Tips for T.V.P.:
a. Hydrate TVP with equal parts hot liquid & TVP.
b. Generally you add 1/2 - 2/3 cup dry TVP to one pound ground meat.
c. It is best if hydrated TVP is mixed into raw meat & cooked with it so meat & TVP stick together & TVP will also get flavor from the fat in the meat.
d. Flavor of TVP disappears if overcooked. When using it straight without any meat, add towards the end of cooking time to retain flavor.

5. On a daily basis when the recipe calls for eggs or milk use your powdered eggs and powder milk to help rotate them.

RECIPES USING YOUR FOOD STORAGE AND BASIC FOOD STORAGE ITEMS:

BREAKFAST IDEAS:

Whole Wheat Mush

Toast 1 cup whole wheat kernels on hot frying pan until begins to pop and get fat. Grind fried kernels on cracked wheat setting. Soak in 2 1/2 - 3 cups water over night. In the morning, salt and bring to boil. Cook in 5 minutes. Serve with honey and cream.

Wheat Flakes

1 1/2 cup whole wheat flour
3/4 teaspoon salt
1/4 cup soy flour
1/4 cup peanut butter
1/2 cup wheat germ
3/4 cup water

Combine flours, wheat germ, and salt. Beat peanut butter with water until smooth, then add dry ingredients to make a soft dough. Add a tablespoon or two more of water, if necessary, to make a dough that can be rolled. Roll as thin as possible, between waxed paper, remove was paper, place on baking sheet, bake and break in pieces. 350 degrees for 15-20 minutes. Store in air-tight container.

Quick Cracked Wheat Cereal

1 cup cracked wheat
3 cups water
1/2 teaspoon salt

Combine ingredients and cook over direct heat about 20 minutes, stirring frequently, or reduce water to 2 cups. Cook on top of a double boiler for about 45 minutes. Sweeten to taste.

Peanut Butter Granola

2 3/4 cups oats
1/4 cup wheat germ
1/4 cup sunflower seeds
2 tablespoons oil
1/4 cup honey
1/4 teaspoon vanilla
1/3 cup peanut butter
1/2 raisins

Stir together oats, wheat germ and seeds. Heat oil and hone in saucepan. Remove from heat and add vanilla. Stir in peanut butter and blend well. Pour over dry ingredients and mix with wooden spoon. Spread on cookie sheet. Bake at 225 degrees for 1 hour. Cool and add raisins.

Recipes using T.V.P.:

MAIN DISHES:

Meat Loaf

1 1/2 lbs ground beef. . . . . . . . . . . . . . . . . . . . . . . . . . . 1/2 cup grated onion
1 cup Pork or Beef TVP (pre-soaked &  drained) . . . 1 teaspoon salt
1 cup dry bread crumbs . . . . . . . . . . . . . . . . . . . . . . . . 1/2 teaspoon sage
1 cup milk (use powder milk to rotate) . . . . . . . . . . . 2 teaspoon prepared mustard
2 beaten eggs (use powder eggs to rotate) . . . . . . . . dash pepper
Combine all ingredients above, place in baking dish/pan, top with catsup. Bake at 350 degrees for 45 minutes.

Tuna Spread

1 can tuna
1 cup unflavored TVP (reconstituted in 1 cup water)
2/3 cup salad dressing
relish
Mix TVP with tuna & set overnight in refrigerator. Mix in remaining ingredients. Spread on bread or crackers.

Tamale Pie

1 pound hamburger . . . . . . . . . . . . . . 1 cup chopped green pepper
1 chopped onion . . . . . . . . . . . . . . . . 1 glove garlic, minced
1 16 oz can of tomatoes . . . . . . . . . . . 1 6 oz can tomato paste
1 12 oz can corn, drained . . . . . . . . . 1 can sliced ripe olives (optional)
1 tablespoon sugar . . . . . . . . . . . . . . 1 teaspoon salt & a dash of pepper
2-3 teaspoon chili powder . . . . . . . . 1 1/2 cup sharp Cheddar or American cheese, grated
1/2 cups of cold milk . . . . . . . . . . . . 1/2 yellow corn meal
1/2 teaspoon salt . . . . . . . . . . . . . . . 1 Tablespoon butter

Brown the first four ingredients. Drain the fat and add the tomatoes, tomato paste, corn, olives, sugar, salt, chili powder, and pepper. Simmer 20 minutes until thick. Add cheese and stir until melted. Pour into 9x13 baking dish.

Make corn meal topping by heating milk in double boiler , add salt and slowly stir in corn meal. Cook and stir until thick (about 20 minutes), add butter and spread over top of meat mixture. Bake at 350 degrees for 40 minutes. Serves 8-10.

Pioneer Stew

1 1/4 cups (1/2 pound) dried pinto or kidney beans
3 cups cold water
1 teaspoon salt
1 pound ground beef or 1 can chunky turkey or beef
1/2 cup finely chopped green pepper
1/2 cup chopped onion
1 can 16 oz whole kernel corn, undrained
1 can 16 oz tomatoes, undrained
1/2 teaspoon chili powder . . . . . . . . . . . . . 3/4 teaspoon salt
1/2 cup sharp Cheddar or American cheese, grated

In large saucepan place washed and drained beans, cold water, and salt. Bring to boil. Cover and simmer 2 minutes. Remove from heat and let stand 1 hour. Return to heat and let simmer 1 hour and 15 minutes. In Skillet cook ground beef, chopped onion and green pepper until meat is browned and vegetables are tender. Drain off fat. Add meat mixture, corn, tomatoes, chili powder, and salt to taste to beans. Simmer 20 minutes. Combine 1 tablespoon flour with 2 tablespoon water. Stir into stew. Cook and stir until thickened and bubbly. Stir in cheese. Makes 8 servings.

Pinto Bean Casserole

1 150z can of pinto beans (use juice)
1 pkg corn tortillas
1 lb. hamburger
1 15oz can Italian style marinara sauce
1 cup grated cheese

Butter bottom of dish, layer tortillas to cover bottom of oblong cake pan or baking dish. Brown hamburger and drain. Put beans over tortillas, then sauce and hamburger, sprinkle with grated cheese. Bake at 350 degrees for 30 minutes.

Cracked Wheat Casserole

1 lb ground beef
1/2 cup chopped onion (1 medium)
1 small garlic clove
1 1/2 cups water
1/2 cup uncooked cracked wheat
2 Tablespoons chopped parsley
1 tablespoon beef bullion
1/2 teaspoon salt
1/4 teaspoon oregano leaves
1/4 teaspoon pepper
1/4 cup Parmesan cheese
1 cup chopped tomatoes (fresh or canned)

Brown ground beef with onion and garlic until pink color has gone form the meat. Drain. Combine with rest of ingredients except cheese and tomatoes.

Bake in lightly covered 1 1/2 quart casserole for 45 minutes or until the cracked wheat is tender and water has been absorbed. Stir in cheese and tomatoes, let stand a minute and serve. Serves 6.

Taco Casserole

1 lb ground beef
1 cup Salsa
1/2 cup mayonnaise . . . . . . . . . . . . . . 2 teaspoons chili powder
2 cups crushed tortillas chips . . . . . . 1 to 2 cups shredded cheese
1 medium tomato, chopped . . . . . . . 2 cups shredded lettuce

Brown ground beef and drain. Add salsa, mayonnaise, chili powder, mix well. In an ungreased 2 quart baking dish, layer half of the meat mixture, chips and cheese. Repeat layers. Bake uncovered at 350 degrees for 20-25 minutes or until heated through. Just before serving, top with tomato and lettuce. Serves 6.

WAYS TO USE WHEAT:

Chinese Fried Wheat

1 cup cracked wheat (strain out flour before cooking)
2 1/2 cups water . . . . . . . . . . . . . . . . . . . . . 1/2 teaspoon salt
3 tablespoons vegetable oil . . . . . . . . . . . . 1 beaten egg
1 onion, minced . . . . . . . . . . . . . . . . . . . . . . . 1/4 cup celery, diced
2 tablespoons soy sauce or to taste . . . . . . Bacon or ham

Bring wheat, water and salt to a boil and cook for 20 to 30 minutes. Put in a strainer and drain off thick liquid (save for gravy). Wash wheat with cold water to make it fluffy. Press wheat to remove all moisture possible. Set aside. Heat 1 tablespoon oil in heavy skillet. Slowly add beaten egg, stirring rapidly with fork so egg is light and fluffy. Set aside. Add to skillet 2 tablespoons of oil, minced onion and celery and cook until tender. Then add wheat, soy sauce, bacon or ham, and egg. Heat through and serve with extra soy sauce, if desired. Served 8.

Italian Fried Wheat

Wheat . . . . . . . . . . . . . . . . . . . . . . . . . . . . 2 tablespoons oil
Italian blend seasoning to taste . . . . . . . Left over roast or other meat
Salt to taste

Prepare wheat the same as for Chinese Fried Wheat above. Heat oil in skillet then add wheat, Italian blend, left over roast (meat), and salt to taste. Serves 8

Spanish Fried Wheat

Wheat . . . . . . . . . . . . . . . . . . . 1 chopped onion
Chili powder . . . . . . . . . . . . . . Salt
Beef bouillon powder . . . . . . Chopped fresh green onions

Prepare wheat the same as for Chinese Fried Wheat. Heat oil in skillet, cook chopped onion until golden brown, then add wheat. Toss lightly then add remaining ingredients. Serves 8

Cheese and Cracked Wheat Casserole

1 cup cracked wheat . . . . . . . . . . 2 cups cold water
1 teaspoon salt

Combine the above, bring to boil then simmer for 15 minutes. Meanwhile, heat:
1 can celery soup . . . . . . . . . . . 3/4 cup grated cheese

Mix wheat and soup mixtures together. Place in buttered casserole dish. Top with bread crumbs and sprinkle with 1/2 grated cheese. Bake at 350 degrees for 25 minutes.

***NOTE: Meat Substitutes or extenders--Cooked wheat, cracked or or whole, can be fried with hamburger and used in sloppy joes, spaghetti, pizza, or in casseroles.

HONEY RECIPES:

Cinnamon Honey Butter

1 cup honey
1/2 cup butter
1 teaspoon cinnamon

Combine ingredients with electric mixer on high speed or whisk until creamy and smooth.

Baked Honey Custard

2 eggs (use powder eggs to rotate)
2 cups milk (use powder milk to rotate)
1/2 cup honey
1/8 teaspoon salt

Beat eggs slightly. Add milk, honey and salt. Pour into individual molds and set in a pan of water. Bake at 350 degrees for 30 minutes.

Honey Oatmeal Bread

1 cup rolled oats. . . . . . . . . . . . 1-2 tablespoons honey or raw sugar
2 cups boiling water . . . . . . . . 1 1/2 teaspoon salt
2 pkgs dry yeast . . . . . . . . . . . 1 egg, beaten
1/3 cup lukewarm water . . . . 3-3 1/2 cups unsifted whole wheat flour
1/2 cup honey

Put oats in large bowl & add boiling water. Let stand until lukewarm (about 20 minutes). Add yeast which has been dissolved in lukewarm water & let stand 5 minutes. And honey & oil, then dry ingredients. Knead for 5 minutes. Let rise-knead again. Shape into 2 loaves. Let rise 10 minutes and then bake in a well-greased loaf pans at 325 degrees for 1 hour.

TREATS WITH WHEAT:

Easy Whole Wheat Bread

2 tablespoons yeast . . . . . 3 tablespoons honey
1/2 cup warm water. . . . . 1/2 teaspoon salt
3 cups warm milk . . . . . . . 2 eggs
1 cup canned milk . . . . . . . 9-10 cups whole wheat flour

Dissolve yeast in warm water. Add milk, honey, salt and eggs. Add 8-10 cups whole wheat flour stirring with a wooden spoon until stiff. Spoon into 3 oiled loaf pans. Bake at 450 degrees for 10 minutes. Turn down oven to 350 degrees and bake 50 minutes.

Whole Wheat Noodles

1 egg, beaten . . . . . . . .1 cup whole wheat flour
2 tablespoons cream

Combine all ingredients. Add enough flour to make a stiff dough. Roll out and slice 1/8" thick. Let dry 2 hours. Drop into boiling liquid. Cook for 10 minutes.

Chocolate Chip Bars

1 1/4 cups brown sugar . . . . . . . . . . 1 teaspoon baking powder
1/3 cup margarine or butter . . . . . . 1/2 cup nuts
2 eggs . . . . . . . . . . . . . . . . . . . . . . . . . 1/2 cup chocolate chips
1 1/4 cup whole wheat flour

Mix sugar, margarine/butter & eggs together. Blend in flour and baking powder. Add nuts and chops and mix to combine. Grease a 9x9 baking dish. Bake at 350 degrees for 30 minutes.
Bake at 350 degrees for 25 minutes.
