Honey (How to buy, store and use)

Honey is a great item to store because, like hard red winter wheat, is stores forever. The only thing you have to be concerned about is it crystalizing. To avoid this you need to turn the jars of honey over every 6 months. If it dos crystalize (get hard), all you have to do it heat it up, but you should not heat honey to often. If you buy honey in 5-6 pound plastic jugs it is best to put it into masonary canning glass jars. That way if it does cyrstalize you will only heat up one small jar instead of the large 5-6 pound jug. To heat up remove the lid on the masonary canning jar and heat in a pan of boiling water. Make sure the water does not go over the top of the jar.
